PANCAKES – The perfect Friday treat

This morning I woke up with one thing on my mind…PANCAKES!

In my pre baby days I would to love make (and eat) pancakes. However now my little monkey is around, I haven’t had as much time. It’s been so long since my last batch that it took me a while to find my trusty recipe. Thank goodness for Pinterest!

The recipe I follow is for quick and easy American Pancakes. It’s pretty simple and contains only four ingredients which most people will have in their cupboard. This is my favourite recipe because you’ll end up with deliciously light and fluffy pancakes. They go perfectly with slices of fruit and a splash of maple syrup.

One thing I would recommend is to use a good non-stick pan. If not you’ll need to used oil or butter which I find can give your pancakes a greasy finish. Using a non-stick pan will give you to achieve that fluffy finish, the perfect finish for any pancake!

Considering I haven’t made pancakes for well over a year I was surprised how well they turned out. More surprising was how much Rory enjoyed them! He can be a little fussy with new food. Meaning he has a tendency to lick and spit. However these little beauties came out trumps! At one point I thought he would swallow the thing whole.

Obviously pancakes are not an everyday go to breakfast, especially if you’re watching your weight after the Christmas binge. Although they do make a nice treat!

As they went down so well I think I’ll make them on a more regular basis. I’d forgotten how easy they were to make, but also how delicious they are to eat! Why don’t you give them a go this weekend?

    My kids love my husband’s pancakes. I like anything that allows me to use my maple syrup. My favorite breakfast is either French Toast or a good omelet.

      Oh no! I’m only good at american pancakes. My OH has to make the pancakes for pancake day, it’s about the only thing he can cook!!! xx

    These are a firm favourite in our house. I used to make them in batches and warm up the remainders in the toaster for the next couple of days. Much better when they’re fresh out the pan though and now M is older there are NEVER any leftover ?
