On your marks, get set, BAKE! #2

Its biscuit week…well it was on Wednesday but as usual I’m late to the party!

If I had to choose one biscuit to eat for the rest of my life it would be a very close call between a custard cream and a good old fashioned chocolate digestive! I like a strong biscuit which can hold its own. After all it does have to withstand a proper dunking in a Yorkshire cup of tea!

Although some of the bakers biscuits might not have stood a chance against a builders brew, there were some pretty impressive creations. My favourite bake this week came from Andrew. I think the detail which went into his ‘Punting in Cambridge’ showstopper was brilliant, all thirty seven elements of it!

Inspired by another week of baking excellence, I put on my apron and got back in the kitchen. This week I chose a recipe from Hemsley and Hemsley for a healthier version of chocolate chip cookies. A slight variation on the brief but it can be found in their latest book good + simple.

I was recently introduced to their alternative style of cooking. All their recipes are free from gluten, grains, refined sugar and hydrogenated vegetable oils. This gives you the ability to make nutritious food that tastes great! If your a fan of cougetti give these girls a go!

While we’re on the subject of the Hemsley sisters, I have to share with you one of my all time favourite breakfasts, the one pan full monty breakfast! Its a delicious alternative to a greasy fry up, all the satisfaction with non of the guilt! Why not give it a try this weekend?

Anyway back to the baking! As I discovered yesterday, baking with an uncooperative baby can be quite challenging. My first attempt ended up staying in the oven a little too long…

 img_3016Thankfully I had enough ingredients for a second attempt, but by this point the baby was getting restless. So instead of traditionally sized cookies, I opted for sharing cookies. Never the less the end product was far better than the first.

I’m yet to test this bake on anyone other than Ryan (who was not a fan due to the dark chocolate) but if your looking a gluten free, vegan cookie this ones definitely worth a try!
