Cake. It’s a four letter word that fills your brain with excitement, your taste buds with joy and your belly with hunger. In all my twenty seven years, I’m yet to find a cake which I don’t like. Trust me when I say – and I’m sure you always do – that I have tried many cakes in my time! Working in an office always helps. It’s constantly someones birthday, there’s a never ending stream of charity bake sales and just when you thought it was safe to eat a salad, someone buys a yellow label Victoria sponge from M&S!!
Some of you may remember that back in May I handed over my blog to seven amazing bloggers to help raise awareness of food allergies. The series was incredibly eye opening, especially for me. Rory can be awfully fussy but reading the experiences of these incredibly honest parents really helped me to understand just how challenging their day to day lives can be. So when an email from Maggie over at Bakeit Freefrom arrived in my mailbox I was absolutely delighted.

When Maggie’s Bakeit Freefrom kit arrived, I was pleasantly surprised. Not only were the ingredients beautifully packaged, but by pure coincidence she’d also sent me the kit to make my favourite cake – a deliciously tangy lemon drizzle!
Now anyone who knows me will tell you that I love to cook. Over the past year I’ve tried my hand at baking on more than one occasion and whilst I am growing in confidence, I still have plenty of room for improvement. The fact that all the ingredients arrived individually sealed and measured not only made the task in hand incredibly easy, it also made it enjoyable – even for a novice.
I found the instructions clear and easy to follow. One thing which I especially loved is that the kit didn’t require the use of any specialist equipment. I often find baking recipes complex and daunting but Maggie’s Bakeit Freefrom kit was something different. Forget your weighing scales and ditch the rolling pin. Heck, if you don’t own a measuring jug Maggie has you covered!
If I’m been completely honest there were several occasions where I doubted Maggie’s recipe. I have a limited experience of baking but everything I do know told me that it was impossible to bake a cake without butter and eggs. At best I was sure it wouldn’t rise or worst, would taste horrendous.
Maggie’s recipe exceeded my expectations. With the help of her expertise, I managed to bake one of the lightest sponges I have ever tasted. For someone who is usually exceptionally critical of their own cooking I really struggled to find fault. And it wasn’t just my own approval. Maggie’s recipe received a great big thumbs up from not only my family (including my ridiculously fussy toddler) but also my team at work!
